VEGAN EATS #8 : MANGO STICKY RICE



Ever since I got back from Thailand last year, I have been craving for their mango sticky rice dessert One of my favorite food/ dessert of all time. Sometimes I can have huge portion of it and eat it as a main meal. That's how you know you love something. Of course I can't just fly to Thailand and have those everyday (although I really want to), but I decided to learn and make my own self recipe.



MANGO STICKY RICE
Ingredient:
- 1 cup of white glutinous rice
- 1/2 can of organic coconut milk
- 2 tbsp white sugar
- pinch of salt
-1 tsp of split mung bean
- 1 fresh cut up mango

Direction:
1. Firstly start with rinsing the white glutinous rice. Soak for at least 4 hours or best overnight.
2. Rinse and drained well.
3. On a medium heat, combine the glutinous rice and 1/2 can of coconut milk and bring it to boil.
4. Keep stirring to avoid it sticking to the bottom of the pan.
5. Add 2 tbsp of sugar and mix well.
6. Add pinch of salt and mix again.
7. Keep stir and stir until the rice cooked.
8. In a separate pan, toast some split mung bean for a minute (you can skip but believe me, it does makes huge difference)
9. Now it's time to plate. White glutinous with split mung bean on top, and don't forget the cut up mango on side.
10. Enjoy!
